Our Wednesday Lunch Date #2: Plant Waters, Habits, and Champagne Cocktails

Hi! How has your week been? I’m happy we can get together today to catch up 🙂 Currently, I’m in Lodi, California – just south of Sacramento – on a sponsored trip with the Almond Board of California. Yesterday, a group of food-loving dietitians and bloggers arrived in town, and today we spent all day learning about almonds, from grafting and growing to marketing to culinary techniques. Tomorrow, we head south to a farm in the Central Valley to watch almonds get shaken down from the trees (!) and visit a processing facility.

I’ve learned a lot about almonds, and I excitedly reported everything I learned to Adam over the phone tonight. There were a lot of surprised “wows!” on his end, and likely a lot of animated gesticulating on mine. In the next few days, I’ll share it all with you too. Get ready. Honey bees, peach trees, and a machine called “the shaker” play a starring role.

The Week in Photos:

The internet at my hotel is too slow to load photos, so I’ll double up next Wednesday. I was going to show you some photos from the California Dietetic Association’s Fall Leadership Conference in Los Angeles, which I attended on Friday. I also made a delicious dinner (the orange chicken linked above) and tried Trader Joe’s new cookie butter ice cream (personally unimpressed – I’ll stick with their vanilla when the craving strikes).

Mother-daughter dinner tonight! Another easy grain Mother-daughter dinner tonight! Another easy grain bowl. Broiled salmon takes 10-15 minutes. Put it over red rice (cooked in rice cooker while I put the baby to bed), and topped with cucumber,  avocado, toasted sesame seeds, seaweed, and wasabi with teriyaki sauce. Inspired by @skinnytaste and @heatherkjonesrd Seattle salmon.
I was craving something wholesome and #plantbased I was craving something wholesome and #plantbased (but I still wanted my chicken!). Made this from scratch after putting the baby to sleep so while it looks like a lot of time, it wasn’t! What you see: Lemon-garlic marinated chicken, sautéed mushrooms, maple roasted carrots, roast sweet potatoes, and pre-washed spinach on brown rice with TJ’s green goddess dressing.
