Dark Chocolate Bark with Candied Orange Peel, Pistachios and Cranberries

Thanksgiving Bark: Dark chocolate with candied orange peel, dried cranberries, and pistachios

This no-bake chocolate bark is the perfect Thanksgiving dessert because it’s fast, no-bake, and includes warm fall colors. Candied orange peel and dried cranberries lend a sweet/tart flavor, and chopped pistachios give this dark chocolate bark a wonderful crunch.

Fighting Colds with Vitamin C & CA Strawberries + A Giveaway!

Thank you to my friends at California Strawberries for sponsoring this post and hosting a giveaway (click here to enter) for a fitness gift pack valued at $150! It’s officially winter. Much of the country is deep into hot cocoa, snowmen, earmuffs, foot warmers, slushy marathon training, skiing, lazy Saturday nights watching movies, and unfortunately, colds and…

Chocolate Almond Butter Cookies

It’s the day between Valentine’s Day (Feb 14) and National Almond Day (Feb 16). Two food-centered holidays practically back to back?! That calls for a chocolate almond celebration. In honor of National Almond Day, the folks at California Almonds sent me a “life hack” kit of almond goodies, tips, and recipes. I thought it would be fun to create…

Raspberry Chocolate Parfait Shots {The Recipe ReDux}

In an attempt to throw together a dessert that required minimal hot kitchen time (um, it’s 100 degrees out), I mixed up a one bowl chocolate cake and layered pieces with fresh, seasonal raspberries and light whipped cream. To keep the dessert mini, I portioned the parfaits into miniature glasses. By the way, a good…

Chocolate Chip Banana Muffins (with wheat germ! and whole wheat flour!)

These little choco-nana treats are airy, not overly sweet, and have a je ne sais quoi flavor (hint: it’s the lemon zest).             The whole wheat flour and wheat germ don’t carry them to health food status, but they do add fiber and antioxidants from whole grains, and a signature…

Whole Wheat Chocolate Chip Cookies

Chocolate chip cookies are supposed to be a delicious treat, and these are no exception. Yes, I swapped half of the white flour for fiber-filled, antioxidant-packed whole wheat flour, but they still taste exactly like a delicious chocolate chip cookie should. My fiancé, who topped his cookie with vanilla bean ice cream (yum), couldn’t even…

Dark Chocolate Orange Tofu Mousse

Non-dairy, creamy, rich, dark chocolate orange mousse. Yes, it does exist.   I feel like tofu can be really divisive. There’s the “I love tofu” camp, and the “that’s the ickiest food ever” camp. A lot of times people are turned off by its texture – and hey, I get it – it’s white, slimy,…

Nuts for Shortbread

This is one of those times you look at an ingredient list and you think to yourself, there is absolutely no way this could taste bad. Butter? check. Sugar? check. Vanilla extract? Salted cocktail nuts?? CHECK. I tore this magically simple recipe out of a Gourmet Magazine in 2006 (sigh. moment of reverent silence for…

Chocolate-Dipped Orange Slices

 Thank goodness for oranges, who are kind enough to break up a long winter with their sweet, juicy, warmer-weather-does-exist flavor. For a refreshingly easy dessert, microwave a large handful of dark chocolate chips. Heat at 30 second intervals, stirring in between until just melted. Peel and separate an orange, and dip one end in the…
