Empanada Mama

(picture from http://vvngirlyhead.blogspot.com) I have an editorial internship at a magazine in NYC for the summer, so I’ll be cooking in my kitchenette here, exploring the exciting world of toaster ovens and hotplates. Mac and Cheese Redux

I’ve been planted at my desk studying for finals and finishing up projects for school. Yesterday, I had an exam at 2pm, but wanted to make sure I had a good lunch because that’s one less thing to worry about during the final! I had a bad experience with stomach grumblings at the SAT (so…

Put it over red rice (cooked in rice cooker while I put the baby to bed), and topped with cucumber, avocado, toasted sesame seeds, seaweed, and wasabi with teriyaki sauce. Inspired by @skinnytaste and @heatherkjonesrd Seattle salmon.
