Welcome to a special Halloween edition of Technique Tuesday! This week, we’re showing you how to “Trick” your friends, loved ones, and kids into having a healthy “Treat” on Halloween. Okay, so it’s not really a trick, it’s a yummy parfait. It’s not that hard a sell 🙂

A candy corn parfait is the perfect light snack for your little trick-or-treaters before they head out on candy collection duty and a fun party appetizer for people to spoon in between sweets. You could also bring individual servings to a school Halloween party with a piece of candy corn on top of every cup!

For a Halloween party at home, consider a DIY yogurt station with pineapple chunks, melon, and yogurt and let guests make their own candy corn parfaits. Offer add-ons like heart-healthy walnuts and almonds, whole oat granola, or mini dark chocolate chips to boost the flavor and fun-factor even more. You could try offering a few of Chobani’s fruity flavors – their pineapple yogurt would work really well with the fresh fruit.

Have a wonderful Halloween filled with candy, costumes, friends and family. Be safe, enjoy your sweet treats, and try to slip something nourishing in there somewhere, okay? 🙂

Confession: I love Candy Corn!

In honor of Halloween Week and the delicious yet not so nutrient dense Candy Corn – Here is my Candy Corn makeover…

The Candy Corn Parfait!!

This parfait is fun, simple and a perfect afternoon snack before heading out to brave the neighborhood.  This will keep your tummies full and will help keep your kids focused on the task ahead – Get to the best houses before all the full size candy bars  good flavored floss containers are gone! :)

This is a fun food activity the whole family can make together! You can usually find prechopped pineapple and cantaloupe in the produce department if you don’t feel like wrestling with chopping a whole pineapple!

Candy Corn Parfait

Candy Corn Parfait:

Ingredients:
  • Chopped Pineapple
  • Chopped Cantaloupe (Can use oranges or any other orange fruit you can think of)
  • Greek Yogurt (I used Plain Nonfat Fage with a drizzle of honey)

Layer chopped pineapple on the bottom of your favorite glass or clear plastic cup (most likely the safest idea if young kids are involved). Then add a layer of chopped cantaloupe. Top layers with a dollop of Greek yogurt. To sweeten things up, you can add a drizzle of honey or use Vanilla or Honey flavored yogurt. Dig in!

Mother-daughter dinner tonight! Another easy grain Mother-daughter dinner tonight! Another easy grain bowl. Broiled salmon takes 10-15 minutes. Put it over red rice (cooked in rice cooker while I put the baby to bed), and topped with cucumber,  avocado, toasted sesame seeds, seaweed, and wasabi with teriyaki sauce. Inspired by @skinnytaste and @heatherkjonesrd Seattle salmon.
I was craving something wholesome and #plantbased I was craving something wholesome and #plantbased (but I still wanted my chicken!). Made this from scratch after putting the baby to sleep so while it looks like a lot of time, it wasn’t! What you see: Lemon-garlic marinated chicken, sautéed mushrooms, maple roasted carrots, roast sweet potatoes, and pre-washed spinach on brown rice with TJ’s green goddess dressing.
