Peanut Butter Yogurt Dipped Strawberries

Plunge fresh strawberries into a warm, creamy, peanut butter fondue for a sweet holiday dessert you can feel good about serving to your family. (With only four ingredients!)

Peanut Butter Yogurt Dipped Strawberries

Raise your hand if any of these sound good to you: Peanut butter and jelly. Chocolate covered strawberries. Butterscotch fudge (like penuche, if you’ve had that).

This recipe combines the best of all of those things, and it only takes about 20 minutes to make. To keep it healthy, I used calcium and protein-rich Greek yogurt to get that luscious, dippable consistency instead of heavy cream.

I’m really happy to be a spokesperson for California Strawberries for the second year in a row because I love California strawberries. I love eating them. I love talking about them. And I love dipping them in things and then eating them and talking about them.

Peanut Butter Yogurt Dipped Strawberries

They are naturally sweet (although one serving of eight berries has less than half the sugar of an apple) and can easily swap in for other produce (like a strawberry salsa instead of tomato salsa) or sugary stuff (like using fresh berries instead of jelly).

Bonus: Clinical research suggests that eating just one serving is good for the whole body, promoting heart and brain health, supporting diabetes management, and reducing the risk of some cancers.

Put it over red rice (cooked in rice cooker while I put the baby to bed), and topped with cucumber,  avocado, toasted sesame seeds, seaweed, and wasabi with teriyaki sauce. Made this from scratch after putting the baby to sleep so while it looks like a lot of time, it wasn’t! What you see: Lemon-garlic marinated chicken, sautéed mushrooms, maple roasted carrots, roast sweet potatoes, and pre-washed spinach on brown rice with TJ’s green goddess dressing.
