So glad you could make it for our weekly lunch date nutrition news roundup! I know you’re busy, so let’s jump right in:

Caroline’s Latest Press:

  • Saturated Fat: Good, Bad, or Benign? – To Live And Diet in L.A. // What the heck is going on with saturated fat? Good? Bad? I combine good science and common sense to cut through the controversy in this guest blog post for To Live And Diet in LA. 
    • Bottom Line:  Focus on food, not nutrients.
  • Create a Nutritious Breakfast with This Formula – STACK Media // A breakfast that combines whole grains, fiber, and protein gives you a quick energy boost, keeps you full, and helps protect you from illness and injury.
  • Grandpere Tiger’s Veggie Soup – Whole Foods Market & PBS // I created a veggie soup for PBS based on the beloved cartoon, Daniel Tiger’s Neighborhood. If your little one loves the show, the soup is a great way to help them eat more vegetables!

Food, Health, & Nutrition News:

  • A Green Light for Red Palm Oil as a Health Aid? – The Wall Street Journal // Not so fast WSJ. Red palm oil is packed with a saturated fat called palmitic acid. While we used to think it was bad for heart health, we’re not so sure anymore. However, we do know that oils high in unsaturated fats like olive oil, canola oil, almond oil, and avocado oil are heart healthy. And while a tablespoon may contain 240% of your daily recommended value of vitamin A (ooohhh), 1 whole baked sweet potato with skin has 561%! Bam.
    • Bottom Line: Don’t go palm crazy yet. Stick with the known healthy oils for now.
  • Tea Sommeliers Are the Hot New Thing in Food Pairing – NPR // The world is weird. But obviously I kind of want to try this.
  • A Way to Get Fit and Also Have Fun – The New York Times // High intensity interval training (HIIT) can get you fit – fast. But many people can’t stand it. Haters gonna hate, but a new study shows they seem to like it better when HIIT gets broken up into minute-long chunks: 30 seconds at low intensity, 20 seconds at moderate intensity, and 10 seconds at high intensity. It works for tons of exercises from swimming to running to rowing.

Mother-daughter dinner tonight! Another easy grain Mother-daughter dinner tonight! Another easy grain bowl. Broiled salmon takes 10-15 minutes. Put it over red rice (cooked in rice cooker while I put the baby to bed), and topped with cucumber,  avocado, toasted sesame seeds, seaweed, and wasabi with teriyaki sauce. Inspired by @skinnytaste and @heatherkjonesrd Seattle salmon.
I was craving something wholesome and #plantbased I was craving something wholesome and #plantbased (but I still wanted my chicken!). Made this from scratch after putting the baby to sleep so while it looks like a lot of time, it wasn’t! What you see: Lemon-garlic marinated chicken, sautéed mushrooms, maple roasted carrots, roast sweet potatoes, and pre-washed spinach on brown rice with TJ’s green goddess dressing.
