2. Mediterranean Smothered Chicken – Iowa Girl Eats

Adam’s favorite dinner that I make, and even loved by a baby doing baby-led weaning who happily gnawed on chicken and artichokes while the rest of us dug in. It’s enough for 2 people with leftovers, but when I make it for 4 people, I double the “smothering sauce.”

3. Orange-Sesame Chicken Stir-Fry with Snow Peas – Ellie Krieger

A healthy swap for a Chinese food favorite.

4. Chicken Taco Night – Caroline Kaufman Nutrition

A basic assembly-serve dinner and an easy answer to “what should I make tonight?” Saute ground chicken (half white meat and half dark meat) with taco seasonings as directed on the packet. Choose a seasoning without any added sugar. Serve with a toppings bar of shredded cheese, mashed avocado, salsa, beans, shredded lettuce, chopped tomato and/or sour cream or Greek yogurt. Warm corn tortillas (with no trans fats or added sweeteners) in the oven and serve!

Mother-daughter dinner tonight! Another easy grain Mother-daughter dinner tonight! Another easy grain bowl. Broiled salmon takes 10-15 minutes. Put it over red rice (cooked in rice cooker while I put the baby to bed), and topped with cucumber,  avocado, toasted sesame seeds, seaweed, and wasabi with teriyaki sauce. Inspired by @skinnytaste and @heatherkjonesrd Seattle salmon.
I was craving something wholesome and #plantbased I was craving something wholesome and #plantbased (but I still wanted my chicken!). Made this from scratch after putting the baby to sleep so while it looks like a lot of time, it wasn’t! What you see: Lemon-garlic marinated chicken, sautéed mushrooms, maple roasted carrots, roast sweet potatoes, and pre-washed spinach on brown rice with TJ’s green goddess dressing.
